There’s something nostalgic about those bourbon chicken bites at the mall—but we’re leveling it up Kountryville style! This Bourbon Chicken recipe is rich, savory, and full of bold Southern flavor. Perfectly marinated, pan-seared, and simmered to saucy perfection, it’s a dish that’ll have everyone asking for seconds!

What you'll need:
1-pound boneless, skinless chicken thighs
1 cup brown sugar
½ cup soy sauce
½ cup teriyaki sauce
½ cup hoisin sauce
1 tablespoon Chinese Five Spice seasoning
1 shot bourbon
1 cup chicken broth
1 tablespoon sesame oil
Instructions:
Cook the rice according to the package directions and set aside.
Prepare the marinade by whisking together the brown sugar, soy sauce, teriyaki sauce, hoisin sauce, Chinese Five Spice seasoning, bourbon, and chicken broth in a medium bowl until well combined.
Marinate the chicken:
Place the chicken thighs in a large Ziploc bag and pour the marinade over them, reserving about 2 cups of the mixture to use later as a sauce.
Squeeze out all the air, seal the bag, and refrigerate.
For best flavor, marinate for 24 hours. If you’re short on time, marinate for at least 1 hour.
Cook the chicken:
Preheat your grill or grill skillet over medium-high heat.
Remove chicken from the marinade and grill, turning at least once, until fully cooked and the internal temperature reaches 165°F.
Let the cooked chicken rest for about 10 minutes before dicing it into bite-sized pieces.
Make the sauce:
In a medium skillet, heat 1 tablespoon of sesame oil over medium heat.
Add the reserved marinade and bring to a simmer.
Stir in the diced chicken and cook for about 10 minutes, allowing the sauce to thicken and coat the chicken.
Serve it up:
Spoon the chicken over your rice, drizzle with extra sauce, and enjoy every bite!
