Looking for a quick and flavorful dinner idea? This Skillet Chicken & Rice recipe is a one-pot wonder, packed with bold Kountryville flavor and easy prep. Perfect for those busy nights when you want something hearty and home-cooked without the fuss.

What you'll need:
4 bone-in chicken thighs
¼ white onion, diced
¼ red bell peppers, diced
¼ yellow bell peppers, diced
¼ orange bell peppers, diced
3 garlic cloves
Badia Adobo w/ Cilantro & Lime seasoning
Badia Adobo w/ Sazón
Smoked paprika
½ tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon butter
1 cup uncooked rice
24 ounces vegetable broth
1 lemon (optional)
Instructions:
Prep the vegetables.
Dice the onion and all three colors of bell peppers, and press the garlic cloves. Set them aside.
Heat oil in a large skillet over medium heat.
Season the chicken thighs on both sides with Badia Adobo w/ Cilantro & Lime, Badia Adobo w/ Sazón, and smoked paprika.
(No need to measure—just season to your taste.)
Sear the chicken.
Once the oil is hot, place chicken thighs skin-side down in the skillet. Cook for 3–5 minutes per side, until the skin is golden brown and crisp.
Remove the chicken from the skillet and set it aside to rest.
Add flavor to the skillet.
In the same pan, add Worcestershire sauce, soy sauce, and butter. Stir in the diced onion, bell peppers, and garlic.
Sauté the vegetables until they’re softened and aromatic.
Stir in the uncooked rice so it gets coated in all the flavor from the pan.
Add the vegetable broth (and broccoli if using). Stir to combine.
Return the chicken to the skillet, placing it on top of the rice and veggies.
Cover and cook for about 20 minutes, or until the rice is tender and the liquid is fully absorbed.
Serve and enjoy!
This one-skillet meal is ready to go—perfect on its own or paired with a side salad or your favorite bread.
