Key Lime Fish w/ Pineapple Broccoli Slaw and Cilantro Lime Rice

Take your taste buds on a tropical getaway with this vibrant Key Lime Fish dish! Seasoned with a citrusy mojo blend and simmered in a green chili lime sauce, this meal is complemented by a refreshing pineapple broccoli slaw and fluffy cilantro lime rice. Perfect for weeknight dinners or impressing guests with Caribbean-inspired flair.

Ingredients:
2 pieces of fish - any type you choose
½ cup Badia Mojo Rub Citrus Blend, separated
2 sprigs of rosemary
½ stick of butter
1 cup green chili lime cooking sauce
1 – 9 oz. bag broccoli slaw mix
1 cup cilantro
½ red onion
1 avocado
1 cup pineapple
Juice of 1 lime
Tajin
¼ cup cilantro avocado yogurt dressing
1 box cilantro lime rice
Instructions
For the Fish:
Rub ¼ cup of Badia Mojo Rub Citrus Blend onto both sides of the fish.
Heat a pan on medium heat and add ½ stick of butter along with 2 sprigs of rosemary.
Place the seasoned fish in the pan and cook for 4–5 minutes on each side.
Add 1 cup of green chili lime cooking sauce to the pan.
Let the fish simmer in the sauce for 6–8 minutes.
For the Pineapple Broccoli Slaw:
Dice 1 cup of cilantro, 1 cup of pineapple, 1 avocado, and ½ red onion. Add all to a large bowl.
Add the 9 oz. bag of broccoli slaw mix to the same bowl.
Slice the lime in half and squeeze the juice from both halves into the bowl.
Add ¼ cup of Badia Mojo Rub Citrus Blend and Tajín to taste.
Drizzle in ¼ cup of cilantro avocado yogurt dressing.
Mix everything together until well blended.
For the Cilantro Lime Rice:
Cook 1 box of cilantro lime rice according to the package instructions.
**Note: The recipe uses Lundberg Family Farms Organic Cilantro Lime Rice, but any brand will work.
To Serve:
Plate the fish alongside the pineapple broccoli slaw and a serving of cilantro lime rice. Enjoy!
