Ragin’ Cajun Super Cheesy Rotini

Turn up the flavor with this bold, Southern-inspired twist on classic Alfredo! Loaded with shrimp, chicken, sausage, and cheese, this Cajun-style cheesy rotini is a comfort food celebration in every bite. It’s rich, cheesy, and packed with the perfect kick of heat—just like we do it in Kountryville!

Ingredients:
1 box rotini (I chose a tricolor vegetable rotini which usually comes in a 12-oz box, but if you choose a regular rotini it will be 16-oz.)
2 boneless, skinless chicken breasts
1 (14-ounce) package Cajun-style or andouille sausage
½ pound shrimp
2 crab leg clusters (optional)
1 green bell pepper
1 red bell pepper
½ white onion
1 stick Kerry Gold garlic & herb butter
4 cups heavy whipping cream
¼ cup milk
16-ounces shredded cheddar cheese
16-ounces shredded cheddar jack cheese
16-ounces shredded mozzarella cheese
½ cup flour
¼ cup vegetable broth
2 tablespoons Badia Mojo Rub Citrus Blend
Slap Ya Mama Cajun Seasoning
Kinder’s Garlic & Herb Seasoning
Old Bay Seasoning
Pepper
Onion powder
Garlic powder
Parsley flakes
Instructions
Cook the pasta according to package directions; drain and set aside.
Heat a grill pan. Season chicken breasts with pepper and Badia Citrus Blend.
Grill the chicken on both sides until internal temperature reaches 165°F. Remove from pan, let cool slightly, then cut into chunks.
Cut the sausage into ½-inch pieces.
Dice the shrimp, bell peppers, and onion.
Heat a large saucepan on medium heat. Add sausage and brown; then remove and set aside.
Add peppers and onions to the sausage drippings in the saucepan. Add avocado oil and garlic & herb butter, and sauté until softened.
Stir in flour and let it blend with the vegetables.
Whisk in heavy cream, followed by the Kinder’s Garlic & Herb Seasoning, Slap Ya Mama Cajun Seasoning, onion powder, and garlic powder.
Gradually stir in vegetable broth while whisking the cream sauce.
Add shredded cheese (cheddar, jack, and mozzarella), and continue stirring until you reach your desired consistency.
Add the cooked rotini and diced shrimp to the cream sauce, and stir to coat evenly.
Preheat the oven to 350°F.
In a large cast iron skillet or baking dish, start layering:
First, a layer of cheese at the bottom
Then sausage
Then the noodles and cream sauce
Next, the grilled chicken
Add another layer of cheese
**Optional: Add crab legs on top, another layer of cheese, and sprinkle with Old Bay Seasoning and parsley flakes.
Bake uncovered for about 15 minutes or until the cheese is melted and golden brown.
Serve hot with salad, garlic bread, or enjoy on its own!
